Who’s Afraid of Tuna Casserole

I’ve never liked tuna casserole. Coming up, the only way my mom made tuna was, tuna salad. When I met my husband, one of his favorite dishes his mom made was tuna casserole. In almost 22 years of marriage, I’ve never made tuna casserole, because I didn’t like it. The truth is… I never tried it.

Breaking Out of My Shell

Recently I completed a project where I cook a weeks menu from Chef Aaron McCargo, Jr.’s new cookbook, Simply Done, Well Done. I called it Dinner At Big Daddy’s House. Mr. Husband is a meat, beans, potato, and rice man. He’s not interested in creativity and experimenting, when it comes to food. But this recipe, he loved!

I love greens, collards, turnips, and mustard’s are my favorite. In the south, we boil our greens, with pork, smoked turkey, or other meat for added flavor, for hours. A good southern cook DOES NOT saute greens!

French Toast To Go

Food Network star, Aaron McCargo, Jr. of “Big Daddy’s House,” gave us a demonstration of his bananas foster served along with blueberry and apple compote, instead of syrup. It was delicious.
