Summer means vacations, road trips, and sporting events, which also equates to eating on the road. Thanks to AAU track meets around the state, region and national events, I quickly learned how to feed my family while road tripping. By doing so I was able to manage our budget, as well as the gastric discomfort.

Recently I completed a project where I cook a weeks menu from Chef Aaron McCargo, Jr.'s new cookbook, Simply Done, Well Done. I called it Dinner At Big Daddy's House. Mr. Husband is a meat, beans, potato, and rice man. He's not interested in creativity and experimenting, when it comes to food. But this recipe, he loved!
